Your mirepoix will be moist and delicious for -- for longer than I want to admit to -- if you saute it in a generous amount of butter and then press it into a freezer container and freeze mirepoix bricks. If you tossed it into the freezer raw, though -- use it soon. There aren't really health concerns with old frozen food.
