Stachyose, raffinose and verbascose are galacto-oligosaccharides that consist of a terminal sucrose linked with 1 (raffinose), 2 (stachyose) or 3 (verbascose) galactose residues by α-1,6 linkages. Stachyose is shown in Fig. 1 as an example.
