RECIPE BELOW! It’s a nectarine and fennel salad with a spicy, garlicky dressing and (a version of this) is in my fridge every week. In this “almost Fall” season, this is the kind of transitional side-dish that I’ll prep to enjoy for a few days. Because it’s lettuce-free, it holds up really well to being dressed in the fridge! Sweet nectarines, crunchy, almost licorice-like fennel, and the dressing of my dreams. Bring it all the way on. Note: don’t like fennel? Try any other firm veggie or fruit:
